These vegan pancakes are fluffy, light, and taste great. They're great for a cozy breakfast or brunch with family and friends on the weekend. Plus, they're simple to make and you can add your favorite toppings to make them your own.
Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/8 teaspoon salt
- 1 cup almond milk
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla extract
Instructions:
Put flour, sugar, baking powder, and salt in a bowl and mix them together
Mix the dry ingredients together with the almond milk, vegetable oil, and vanilla extract
It's okay to have a few lumps, so don't mix it too much
Melt the butter in a pan or griddle that doesn't stick
Grease it a little with cooking spray or oil
For each pancake, put about 1/4 cup of batter on the pan
Once the pancake starts to bubble on top, flip it over and cook the other side until it's golden brown
Do it again with the rest of the batter, making sure to grease the pan as needed
You can top it with maple syrup, fresh fruit, or vegan whipped cream while it's still warm
