Sweet and Sour Tofu Stirfry



A delicious and zesty stir-fry of sweet and sour tofu with colorful bell peppers, sweet pineapple, and crispy tofu all mixed together in a tasty sauce. Served over a bed of rice just right!

Ingredients:

  • 1 package of firm tofu, cubed
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 1 cup pineapple chunks
  • 1/2 cup sweet and sour sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 1/2 teaspoon ginger, minced
  • 1/2 teaspoon garlic, minced
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions:

Press the tofu to remove excess water, then cut it into cubes

In a bowl, combine sweet and sour sauce, soy sauce, rice vinegar, brown sugar, ginger, and garlic

Mix well to make the sauce

Heat vegetable oil in a large skillet or wok over medium-high heat

Add tofu cubes and stir-fry until they become golden and crispy

Remove tofu from the skillet and set aside

In the same skillet, add a bit more oil if needed and saut the sliced onion and bell peppers until they start to soften

Add pineapple chunks and the prepared sauce to the skillet

Stir well and bring to a simmer

Return the crispy tofu to the skillet and toss everything together

Cook for another 2-3 minutes until the tofu is heated through

Season with salt and pepper to taste

Serve the sweet and sour tofu stirfry over cooked rice

Garnish with sesame seeds or chopped green onions if desired
