This Green Goddess Kale Salad is full of healthy vegetables and a creamy herb dressing that makes the whole thing taste great. It's a tasty and healthy meal choice because the textures and flavors are just right.
Ingredients:
- 4 cups kale leaves, stems removed and chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup avocado, diced
- 2 tablespoons sunflower seeds
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh chives, chopped
Instructions:
In a large mixing bowl, combine the kale, cherry tomatoes, cucumber, red onion, and avocado
In a small bowl, prepare the Green Goddess dressing by mixing together 1/4 cup Greek yogurt, 2 tablespoons mayonnaise, 2 tablespoons fresh lemon juice, 1 garlic clove minced, 2 tablespoons fresh basil chopped, 2 tablespoons fresh tarragon chopped, salt, and pepper to taste
Pour the Green Goddess dressing over the salad and toss to coat the ingredients evenly
Sprinkle sunflower seeds, fresh parsley, and fresh chives on top of the salad
