Potato and Egg Stuffed Peppers



These Potato and Egg Stuffed Peppers are a healthy and tasty meal. A tasty dish that's great for any time of the day is made with smooth mashed potatoes, savory spices, and runny eggs baked inside bell peppers.

Ingredients:

  • 4 large bell peppers, halved and seeds removed
  • 2 large potatoes, boiled and mashed
  • 4 eggs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped fresh parsley for garnish

Instructions:

Before you start cooking, heat the oven to 375F 190C

Put olive oil in a pan and heat it over medium-low heat

Throw in the garlic and onions, cut up

Cook the onions until they become clear

To the pan, add the mashed potatoes, cumin, salt, and pepper

Cook for two to three minutes after mixing well

Make a well in the middle of each bell pepper half and fill it with the potato mixture

Put an egg into each half of the pepper

Put the stuffed peppers on a baking sheet and bake them in a hot oven for 20 to 25 minutes, or until the eggs are done the way you like them

Add chopped parsley as a garnish before serving
