Ingredients:
- 2 lbs red potatoes, diced into 1-inch pieces
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 3 tbsp grated Parmesan cheese

- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and black pepper to taste
Instructions:
Get the oven ready by heating it up to 400F 200C
Add the diced potatoes to a large bowl
Add the minced garlic, olive oil, Parmesan cheese, parsley, thyme, rosemary, salt, and black pepper
Toss the potatoes until they are evenly covered
Place the potatoes on a baking sheet that has been lined with parchment paper so that they are all in one layer
After the oven is hot, roast the potatoes for 30 to 35 minutes, stirring them every so often, until they are golden brown and soft when a fork goes through them
