Ingredients:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup cooked quinoa
- 1/2 cup chopped cucumber
- 1/2 cup chopped red bell pepper
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup sliced almonds, toasted
- 1/4 cup crumbled feta cheese
- Juice of 1 lemon
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1 teaspoon honey
- Salt and pepper to taste
Instructions:
Set your grill or grill pan over medium-high heat to get it hot
Put the cumin, coriander, paprika, salt, and pepper in a small bowl and mix them together
Spread this mixture out on top of the chicken breasts
As long as the chicken is cooked all the way through and has nice grill marks, it's done
After taking it off the grill, let it rest for a few minutes
Then, cut it into thin slices
Put the cooked quinoa, chopped red bell pepper, chopped red onion, chopped cilantro, mint, toasted almonds, and crumbled feta cheese in a large salad bowl
To make the dressing, put the lemon juice, olive oil, honey, salt, and pepper in a separate small bowl and mix them together with a whisk
Slice the grilled chicken and put it in the salad bowl
Then, pour the dressing over the top
Toss everything together gently to coat all the ingredients with the dressing and mix them all together
Feel free to eat your Moroccan Chicken Salad right away
