Vegan Birthday Cake Truffles

These vegan birthday cake truffles are a wonderful mix of sweets and memories. They are made with vegan vanilla cake crumbs and frosting, dipped in melted white chocolate, and decorated with bright sprinkles. They are great for parties or just because you want something sweet.

Ingredients:

  • 2 cups vegan vanilla cake crumbs
  • 1/2 cup vegan vanilla frosting
  • 1/2 cup vegan white chocolate chips, melted
  • 1/4 cup rainbow sprinkles

Instructions:

Put the vegan vanilla cake crumbs and vegan vanilla frosting in a large bowl and mix them together until they are well mixed

Make little balls out of the mixture that are about an inch across

Place them on a baking sheet that has been lined with parchment paper

Frozen the baking sheet with the truffles on it for 15 to 20 minutes

While the truffles are chilling, melt the vegan white chocolate chips in a bowl that can go in the microwave

Stir the chocolate chips every 30 seconds until they are smooth

Using a fork, dip each truffle in the melted white chocolate and let any extra chocolate drip off

Then, put the truffles back on the baking sheet

Before the chocolate sets, put rainbow sprinkles on top of the truffles and make sure they stick to the chocolate

Put the truffles back in the freezer for another 10 to 15 minutes to let the chocolate set all the way

Once the truffles are set, put them in a container that won't let air in and put it in the fridge until you're ready to serve them
