Zoodle Salad with Lemon Herb Dressing



This zoodle salad is a light and refreshing choice for brunch. The zucchini noodles are tossed with cherry tomatoes, cucumber, red onion, Kalamata olives, and a zesty lemon herb dressing. It's a perfect combination of flavors that will brighten up your brunch table.

Ingredients:

  • 2 medium zucchinis, spiralized into zoodles
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, thinly sliced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup fresh basil leaves, torn
  • 2 tablespoons pine nuts, toasted
  • Salt and black pepper to taste

Instructions:

Zoodles, cherry tomatoes, cucumber, red onion, Kalamata olives, and crumbled feta cheese should all be put in a large salad bowl together

Cut up the garlic, add the fresh basil, salt, and black pepper to a small bowl, and mix them all together with a whisk

This will make the dressing

Add the dressing to the salad and mix everything together well

To add crunch and flavor, toast the pine nuts and sprinkle them on top of the salad

Right away, serve as a cool brunch dish or a salad for any other event
